a) Goal: Participants will be able to Recognize the role of product tracing in human and animal food safety programs.
b) Scope: Topics in this course include Foundations, Making the Case for Initiating Product Tracing, Supply Chain, and Product Tracing Process.
Course Objectives
Foundations
1. Define traceability.
2. Differentiate between traceback and traceforward.
3. Recognize events that might trigger product tracing.
4. Recognize the importance of stakeholder collaboration.
Making the Case for Initiating Product Tracing
a) Recognize the role of surveillance in the initiation of product tracing.
b) Identify information needed to determine if product tracing is warranted.
Supply Chain
a) Define the farm-to-fork concept.
b) Define the one-step-forward, one-step-back principle.
c) Recognize the importance of records relevant to product tracing.
d) Recognize how product identification relates to product tracing.
Product Tracing Process
a) Identify steps in the traceback process.
b) Recognize the importance of identifying the timeframe of interest.
c) Recognize the use of a traceback flow diagram.
d) Recognize the importance of tracing the product forward.
Duration - 1.5 hours:
Unit 1: Foundations – 25 minutes
Unit 2: Making the Case for Initiating Product Tracing, – 20 minutes
Unit 3: Supply Chain, – 20 minutes
Unit 4: Product Tracing Process – 25 minutes
