About the course

Introductory knowledge, skills, and abilities related to preventing contamination of feed and food during transport.

• Goal: The student will be able to describe how transportation affects human and animal food safety.
• Scope: Topics in this course include foundations, transportation methods, inspections, security, and product safety. 

Course Objectives:

Foundations

• Recognize the importance of transportation,
• Define relevant terminology,
• Recall examples of stakeholders,
• Identify agency jurisdiction for transportation, and
• Identify knowledge of transportation regulations.

Transportation Methods

• Identify transportation modes in human and animal food systems,
• Recognize the mode of transportation suited for specific products,
• Recognize hazards unique to specific modes of transportation, and
• Recognize the importance of dedicated transportation equipment.

Inspections

• Recognize the inspection role in transportation incidents,
• Recognize the disposition of damaged products,
• Recognize procedures for the inspection of specific transportation conveyances,
• Identify receiving procedures,
• Identify required documentation, and
• Recognize the importance of maintaining shipping documentation.

Security

• Recognize the importance of transportation security,
• Identify areas of vulnerability,
• Identify the importance of seals,
• Recognize examples of security breaches, and
• Recognize the importance of documentation.

Product Safety

1. Recognize the importance of sanitation practices in transportation,
2. Identify safe handling methods in animal food transportation,
3. Recognize the importance of pest control,
4. Recognize the importance of environmental control, and
5. Recognize the importance of cross-contamination

Duration - 1.45 hours:

• Unit 1: Foundations – 25 minutes
• Unit 2: Transportation Methods – 15 minutes
• Unit 3: Inspections – 15 minutes
• Unit 4: Security – 15 minutes
• Unit 5: Product Safety – 25 minutes
• Final Knowledge Check – 10 minutes
